Creamy Moroccan Chicken Recipe

Try the Moroccan style of cooking creamy chicken.

Ingredients - serves 4
  • 750 g chicken thigh fillets, quartered
  • 1/4 cup plain flour
  • 1 tbsp oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 garlic clove, crushed
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground cinnamon
  • 375 mL can CARNATION Light & Creamy Evaporated Milk
  • 1/2 cup water
  • 1/4 cup sultanas
  • cooked couscous, for serving
Preparation
  • Coat chicken pieces with flour, shaking off excess. Heat oil in pan, cook chicken until golden brown, remove from pan and keep warm.
  • Add onion, carrot and garlic to pan, cook 2 minutes. Stir in excess flour from the chicken with the combined spices, add CARNATION Light & Creamy Evaporated Milk and water, bring to boil stirring.
  • Return chicken to pan, add sultanas, simmer for 10 minutes or until chicken is cooked through.

Moroccan Chickpea and Lentil Soup ٌRecipe

Spicy and delicious Chickpea and Lentil Soup ٌRecipe from the Moroccan kitchen, learn the Moroccan way of cooking tasty food.

Ingredients - serves 6
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • 2.5 cm fresh ginger, finely grated
  • 3 tsp ground coriander
  • 2 tsp ground cumin
  • 1/2 tsp chilli powder
  • 1/2 tsp saffron threads, soaked in 2 tbsp boiling water
  • 410 g can chopped tomatoes
  • 1 tbsp MAGGI Liquid Seasoning, prepared with 1 litre (34 fl oz / 4 cups) water
  • 250 grams red lentils, rinsed well
  • 1 Ltr water
  • 410 g can rinsed and drained chickpeas
  • 1/3 cup chopped fresh coriander
  • 1/3 cup chopped flat leaf parsley
  • low fat yoghurt, for serving
Preparation
  • Heat oil in a large, heavy based saucepan over medium heat. Add onion and cook, stirring occasionally for 5 minutes, or until soft.
  • Add garlic, ginger, coriander, cumin and chilli. Cook stirring for 1 minute.
  • Add saffron with soaking liquid, tomatoes, MAGGI Liquid Seasoning, lentils and water. Bring to the boil then simmer, uncovered, for 30 minutes.
  • Add chickpeas and cook a further 10 minutes.
  • Remove pan for the heat and stir in coriander and parsley. Serve with a dollop of yoghurt if desired.

Moroccan Harira Soup Recipe

Tasty and easy Moroccan recipe to prepare harira. In Morocco this Soup is served as an important part of the festivities of Ramadan. It's the traditional soup to break the fast.

Ingredients
  • 100g dried chickpeas , soaked overnight and drained
  • 100g Puy lentils
  • 450g ready-diced lamb , cut into 1cm cubes
  • 1 large Spanish onion , finely chopped
  • 1 tsp turmeric
  • ½ tsp ground cinnamon
  • ½ tsp each ground ginger, saffron strands and paprika
  • 50g butter
  • 100g long grain rice
  • 2 tbsp chopped fresh coriander
  • 4 tbsp chopped fresh flatleaf parsley
  • 4 large ripe tomatoes , skinned, seeded and chopped
  • lemon quarters, to serve
Preparation
  • Tip the chickpeas and lentils into a large saucepan or flameproof casserole. Add the lamb, onion, turmeric, cinnamon, ginger, saffron strands and paprika, then pour in 1.5 litres/21⁄2 pints water. Season.
  • Bring to the boil, skimming all the froth from the surface as the water begins to bubble, then stir in half the butter. Turn down the heat and simmer the soup, covered, for 11⁄2 -2 hours until the chickpeas are tender, adding a little more water from time to time as necessary.
  • Towards the end of the cooking time, prepare the rice. Bring 850ml/ 11⁄2 pints water to the boil in a saucepan, shower in the rice, the rest of the butter and salt to taste. Cook until the rice is very tender. Drain, reserving 3tbsp of the liquid.
  • To finish, put the reserved rice liquid in a small saucepan. Stir in the coriander, parsley (hold a little back for a garnish if you like) and tomatoes, then simmer for 15 minutes, stirring from time to time. Add to the soup with the rice, and then taste for seasoning. Simmer for 5-10 minutes to thicken slightly. Serve hot, with a lemon quarter for each serving so guests can squeeze over lemon juice to taste.

Moroccan Spiced Tuna Recipe


Enjoy tuna recipe with Moroccan spices for a super fast meal.

Ingredients
  • 20g pack coriander (leaves and stalks)
  • 3 garlic cloves
  • ½ tsp each paprika , ground cumin and chilli powder
  • 1 tbsp lemon juice
  • 150ml extra-virgin olive oil
  • 4 x 8oz/200g fresh tuna steaks, each about 2.5cm/1in thick
Preparation
  • Put the coriander, garlic, spices and lemon juice into a blender and blitz to a purée. With the motor running, slowly add the olive oil until you get a smooth, thick sauce. Set aside.
  • Sit the tuna steaks in a non-metallic dish and cover with two-thirds of the sauce. Cover with cling film, then leave to marinate in the fridge for about 20 mins (or for up to 4 hrs).
  • Heat a griddle pan or grill. Shake off any excess marinade, season the tuna steaks, then cook for 2-4 mins, depending on thickness for medium rare, turning once (cook 2 mins more for well done). Drizzle over the remaining sauce paste to finish. Try serving with new potatoes; for a Moroccan twist, toss melted butter, harissa spice mix and chopped coriander leaves through the potatoes.

Moroccan Fruit salad Recipe

Ingredients

Seasonal, colourful fruit, washed and cut into chunky pieces – grapes, rockmelon, apple, pear, mandarin segments – pits removed, banana.

Moroccan Dressing

1 cup water
1 small stick cassia bark
2 teaspoons orange blossom water
3 tablespoons sugar
2 tablespoons lemon juice
10 mint leaves, torn

Preparation

Combine all ingredients for dressing except mint leaves in a saucepan. Bring to the boil and simmer for 5 minutes. Cool and place in fridge for 1 hour then mix dressing through the fruit salad with mint leaves.

Baked Moroccan chicken and rice

Something delicious, you must try this dish sooner or later, and see if you agree.


Cooking Time 35 minutes

Ingredients (serves 4)
  • 1/4 cup apricot jam
  • 1 1/2 tablespoons Moroccan seasoning
  • 1 garlic clove, crushed
  • 1 tablespoon olive oil
  • 500g chicken thigh fillets, trimmed, cut into 3cm pieces
  • 2 cups long-grain rice, rinsed
  • 1 brown onion, thinly sliced
  • 1 large tomato, roughly chopped
  • 1/2 cup frozen peas
  • 2 1/4 cups salt-reduced chicken stock
  • 1 lemon, juiced
  • steamed green beans, to serve
Method
  • Preheat oven to 220°C. Combine jam, seasoning, garlic and oil in a bowl. Add chicken and stir to coat. Season with salt.
  • Place rice in a 5cm-deep, 22cm x 26cm (base) baking dish. Top with onion, tomato and peas. Pour over stock and 1/4 cup of lemon juice. Top with chicken.
  • Bake, uncovered, for 30 to 35 minutes or until chicken is cooked through and rice tender. Serve with steamed beans.

Moroccan salmon with cream cheese & garlic mash

Preparation Time 15 minutes
Cooking Time 12 minutes

Ingredients (serves 4)
  • tbs olive oil
  • 1 leek, white part only, finely sliced
  • 2 cloves garlic, crushed
  • 1kg potatoes, steamed
  • 100g light cream cheese
  • 3/4 cup (180ml) milk
  • 4 x 200g Atlantic salmon fillets
  • 1 tbs Moroccan seasoning
  • Olive oil spray
  • 100g baby spinach leaves
Method
  • Heat oil in a saucepan over medium heat. Add leek and cook for 3 mins, then add garlic and cook for 1 min.
  • Transfer to a food processor with cooked potatoes, cream cheese and milk. Process until smooth and season to taste. Return to the saucepan and keep warm.
  • Heat a chargrill pan or BBQ over a medium heat. Lightly sprinkle salmon fillets with seasoning. Spray with olive oil spray and cook for 3-4 mins on each side for medium, or until cooked to your liking. Serve salmon on a bed of mashed potato and baby spinach leaves.
Notes & tips
Hint: Delicious and versatile, cream cheese is available in reduced or full-fat versions as well as a range of flavours such as tomato & basil or chives & onion. Great for adding to jacket potatoes or use in toasted sandwiches.

Grilled Salmon - Moroccan Recipe

The Moroccan method of Grilling Salmon

Ingredients - Makes 2 servings:
  • 2 tablespoons low-fat or nonfat plain yogurt
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons extra-virgin olive oil
  • 1 clove garlic, minced
  • 3/4 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon salt
  • Freshly ground pepper to taste
  • 8 ounces center-cut salmon fillet, skinned and cut into 2 portions
  • 2 lemon wedges
Preparation:
  • Combine yogurt, parsley, cilantro, lemon juice, oil, garlic, paprika, cumin, salt and pepper in a small bowl. Reserve 2 tablespoons of the sauce; cover and refrigerate. Place salmon in a medium sealable plastic bag. Pour in the remaining yogurt mixture, seal the bag and turn to coat. Refrigerate for 10 (or up to 30) minutes.
  • Meanwhile, preheat grill to medium-high.
  • Oil the grill rack. Remove the salmon from the marinade, blotting any excess. Grill the salmon until it is browned and just cooked through, 4 to 5 minutes per side. Top the salmon with the reserved sauce and garnish with lemon wedges.
Tip: To skin a salmon fillet: Place a fish fillet on a clean cutting board, skin side down. Starting at the tail end, slip the blade of a long, sharp knife between the fish flesh and the skin, holding the skin down firmly with your other hand. Gently push the blade along at a 30° angle, separating the fillet from the skin without cutting through either.

Lamb Chops with Moroccan Barbecue Sauce

Yummy recipe for Lamb Chops with Moroccan Barbecue Sauce. Start the BBQ season with delicious dish!

Ingredients - Makes 4 main-dish servings:
  • 8 lamb loin chops (each about 1 in. thick and 4 oz.), fat trimmed
  • Mint chutney (recipe follows)
  • Salt and pepper
  • Moroccan barbecue sauce (recipe follows)
Preparation:
  • Rinse lamb chops; pat dry. Place chops in a bowl with about 1/4 cup mint chutney; turn to coat. Cover and chill at least 4 hours or up to 1 day.
  • Lift lamb chops from bowl (discard any chutney in bowl) and sprinkle all over with salt and pepper. Place on a grill over a bed of medium-hot coals or medium heat on a gas grill (you can hold your hand at grill level only 3 to 4 seconds); close lid on gas grill. Cook chops, turning once, until browned on both sides but still pink in the center (cut to test), 9 to 12 minutes total.
  • Place chops on plates and drizzle with Moroccan barbecue sauce; offer remaining chutney and sauce alongside.
Mint chutney: In a blender, whirl 1 cup lightly packed rinsed fresh mint leaves, 1/2 cup olive oil, 1/2 cup chopped green onions (white and pale green parts), 3 tablespoons parsley leaves, 1 tablespoon lemon juice, 1 peeled clove garlic, 1 teaspoon salt, 1/2 teaspoon curry powder, and 1/4 teaspoon cayenne until smooth. Makes about 1 cup.

Moroccan barbecue sauce: In a 2- to 3-quart pan, combine 3/4 cup honey, 1/2 cup fresh cilantro sprigs, 1/3 cup lemon juice, 1/4 cup rice vinegar, 1/4 cup ketchup, 1/4 cup soy sauce, 1 clove garlic, 1 whole star anise, 1 cinnamon stick (3 in. long, broken into pieces), 3/4 teaspoon black peppercorns, and 1/4 teaspoon each ground ginger, ground cardamom, whole cloves, hot chile flakes, and salt. Bring to a simmer over medium-high heat; cook, stirring occasionally, until sauce is reduced to about 1 1/4 cups, about 15 minutes. Pour through a fine strainer into a bowl. Makes about 1 1/4 cups.

Moroccan Mint Tea

How to make traditional Moroccan Mint Tea.

Moroccan mint tea is a very important part of Moroccan dining

The national drink is served in glasses at all times and everywhere. It has mint flavor, is very sweet and is sometimes seasoned with orange blossoms.

Ingredients:

1 bunch mint, and mint leaves for garnish
3 teaspoons green Moroccan tea
3 tablespoons sugar or honey

Preparation:

Water: Boil water. Pour a small amount in teapot and swish around to warm the pot. Put the tea in the tea pot, put a little boiled water and swish to rinse tea with boiling water discard water from the tea, Add the mint (reserve some for garnish) and sugar in the teapot, cover with boiling water and Bring to a boil again put it on a slow flame for 1 minute. Let tea brew, stirring the leaves once or twice. Cover pot; steep at least 5 minutes.

Pour a small amount of tea into the Moroccan tea glass; pour the tea back into the teapot. Repeat 3 times to blend ingredients; garnish each colorful Moroccan tea glass with springs of mint. Add a sprinkling of orange-blossom water. Serve very hot.

Use a nice serving brass tray and colorful tea glasses to make your tea party a feast for the eyes and by using different colors of tea glasses each guest will have a different color of his own.

karkadeh Tea - karkadeh Tea Recipe

Karkadeh, carkade or karkady teay is served hot or chilled with ice. It is very popular in some parts of the Middle East, and especially in North Africa. Karkadeh Hibiscus tea is the infusion made from the calyces (sepals) of the Hibiscus sabdariffa flower.

Serves 4 persons

Ingredients:
  • 1 cup Karkadeh (Hibiscus) flowers
  • 4 cups water
  • 1 cup sugar
Preparation:
  1. Wash Karkadeh flowers well, then place in a pot with 4 cups of water over medium heat.
  2. Let boil for 5 minutes then let soak overnight.
  3. Strain the Karkadeh flowers and pour the juice in a glass pitcher. Add sugar.
  4. Stir well until all sugar dissolves.
  5. Let cool in the fridge and serve chilled.

Hibiscus flower extract has been used in many folk remedies for liver disorders and high blood pressure. The constituents of the flowers contain gossypetin, anthocyanin, and glucoside hibiscin, which may have diuretic and choleretic effects, decreasing the viscosity of the blood, reducing blood pressure and stimulating intestinal peristalsis.

The dried flower contains hibiscic acid. Root contains saponins and tartaric acid. Aspartic acid is the most common amino acid. Dried fruits also contain vitamin C and Ca oxalate; dry petals contain flavonol glucoside hibiscitrin
